  • salt & pepper to taste, as needed

Instructions

  • Thoroughly wash the red potatoes. Place them whole (with the skins on) in a large pot and cover with cold water. Add a pinch of salt to the water. Bring the water to a boil, then reduce heat and simmer until the potatoes are cooked well and tender. A fork should easily slide into the center of a potato without resistance. This usually takes about 15-20 minutes depending on potato size. Drain the cooked potatoes completely and allow them to cool down to room temperature. This step is crucial for the best texture and flavor absorption.
  • While the potatoes are cooling, prepare the other ingredients. In a large mixing bowl, combine the OPA Greek Yogurt Feta Dill Dressing, the freshly sliced green onions, and the crispy, crumbled bacon.
