Ingredients

Avocado Fries

  • 1 firm avocado
  • 1/3 cup all-purpose flour
  • 1 egg white
  • 1 1/2 Tbsp. Silk Soymilk
  • 1/3 cup plain bread crumbs
  • 1/4 tsp. Italian seasoning
  • 1/4 tsp. onion salt
  • pepper to taste

Garlic Aioli

  • 1 slice white bread crusts removed
  • 2 tablespoons Silk Soymilk
  • 3 cloves garlic minced
  • 2 egg yolks
  • 3/4 cup olive oil
  • 1 tablespoon lemon juice
  • 1 ⁄4 teaspoon salt plus more if needed
  • 1 dash white pepper

Instructions

  • For the Garlic Aioli: Place the bread slice (crusts removed), Silk soymilk, and minced garlic in a food processor. Blend for about 10 seconds, or until the mixture forms a smooth paste.
  • Add the egg yolks to the food processor and blend until the mixture becomes thick and well combined, approximately 10 seconds.
  • Gradually add the olive oil, 1 tablespoon at a time, while continuously blending after each addition. Continue this process until all the oil has been incorporated and the aioli is thick and emulsified.
  • Stir in the lemon juice, salt, and white pepper. Blend for a few more seconds to ensure all ingredients are thoroughly mixed. Taste and adjust seasoning if needed.
  • Transfer the homemade garlic aioli to a small bowl, cover, and refrigerate until the avocado fries are ready to be served.
  • For the Baked Avocado Fries: Preheat your oven to 450ºF (230ºC). Prepare a baking sheet by lining it with parchment paper for easy cleanup and to prevent sticking.
