Ingredients

  • 1/2 cup light brown sugar
  • 1/4 cup Truvia sweetener or 1/2 cup granulated sugar
  • 1/4 cup coconut oil or 1/4 cup butter, softened
  • 1 cup peanut butter
  • 1/2 cup boiling water
  • 2 cups Bisquick original pancake & baking mix in the yellow box
  • 1 cup chocolate chips I used dark chocolate chips

Instructions

  • Preheat oven to 350º F (175°C). Spray a baking sheet with cooking spray or line with parchment paper, then set aside.
  • In a large mixing bowl, thoroughly stir together the light brown sugar, Truvia sweetener (or granulated sugar), coconut oil (or softened butter), and peanut butter until well combined and creamy. Carefully add the boiling water and mix until the mixture is smooth.
  • Gradually stir in the Bisquick original pancake & baking mix and the chocolate chips until just combined. Be careful not to overmix. Drop the dough by rounded tablespoons onto your prepared baking pan, leaving some space between each cookie. Lightly press the tops of the cookies with the back of a spoon or your fingers to flatten them slightly.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown and the centers appear set. Do not overbake to ensure soft cookies. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
