It was an exhilarating experience that I’ll never forget. After our moped tour, we headed to Turtle Beach for some snorkeling. While I didn’t spot any turtles, I did see some truly spectacular and colorful fish swimming among the coral. It was a beautiful underwater world, even without our shelled friends. So, that’s two amazing experiences to check off my bucket list already!

The excitement didn’t stop there. This evening, we indulged in a traditional luau dinner, adding a third unforgettable item to my growing list of island adventures. Ingredients

  • 1/3 cup coconut oil
  • 4 Tbsp. butter softened (plus extra for buttering pan)
  • 1 cup + 2 Tbsp. Truvia Baking Blend or 2 1/4 cup white sugar, plus extra for bundt pan
  • 3 eggs
  • 3 mashed ripe bananas
  • 1/2 cup 5-oz container plain nonfat Greek yogurt
  • 1 1/2 tsp. vanilla
  • 3 cups white whole wheat flour
  • 1 1/8 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • 3/4 tsp. salt
  • 1/8 tsp. cinnamon
  • powdered sugar
  • milk

Instructions

  • Preheat oven to 350º F. Melt a few tablespoons of butter and spread around a bundt pan, covering the whole surface. Generously sprinkle granulated sugar over the butter, coating the pan evenly. This creates that delicious, slightly crispy crust.
  • In your KitchenAid mixer (or a large mixing bowl), cream together the coconut oil, softened butter, and Truvia Baking Blend (or white sugar) until light and fluffy. This step is crucial for incorporating air and ensuring a tender cake. Then, add in the eggs one at a time, mixing well after each addition. Incorporate the mashed ripe bananas, plain nonfat Greek yogurt, and vanilla extract. Mix until just combined, being careful not to overmix.
  • In a separate medium bowl, whisk together the white whole wheat flour, baking soda, baking powder, salt, and cinnamon. Gradually add this dry mixture to the wet banana mixture, mixing on low speed until just incorporated.
