  • 1/2 cup shredded cheddar cheese divided (or Monterey Jack for a milder flavor)
  • 1/2 cup Italian breadcrumbs
  • 1 Tbsp. fresh lime juice
  • salt and freshly ground black pepper to taste
  • 1/2 cup Panko breadcrumbs

Instructions for Baking Stuffed Tomatoes

  • Preheat your oven to 450ºF (230ºC). Carefully slice the top 1/2 inch from each tomato. Using a spoon or a small knife, scoop out the flesh and seeds from the tomatoes, leaving a sturdy shell. Discard the scooped-out tomato pulp or save it for another recipe.
