Ingredients

  • 1 cup uncooked orzo pasta (whole wheat for extra fiber)
  • 3 ripe tomatoes finely diced
  • kernels cut from one corn cob (or 1 cup frozen, thawed)
  • 1 bunch of green onions finely chopped
  • 1/2 cup chopped jicama (for a lovely crunch)
  • 1 yellow bell pepper finely diced
  • 1 green bell pepper finely diced
  • 1 14-oz can black beans, drained and rinsed
  • 1/2 cup fresh chopped cilantro
  • 1 3.5-oz container feta cheese, crumbled (ensure vegetable rennet for vegetarian)
  • 1/2 cup Tessemae’s Caesar Dressing
  • 1/2 tsp. salt or more to taste
  • 1/4 tsp. black pepper or more to taste

Instructions

  • Cook the orzo pasta according to the package directions until al dente.
  • While the orzo is cooking, prepare your vegetables. In a large mixing bowl, combine the diced tomatoes, fresh corn kernels, chopped green onions, crunchy jicama, diced bell peppers (yellow and green), thoroughly drained and rinsed black beans, and fresh chopped cilantro.
