Ingredients

  • 1 lb. lean ground beef
  • 1 small onion diced
  • 1 tsp. olive oil
  • 3 carrots sliced
  • 3 stalks celery chopped
  • 2 cloves garlic minced
  • 2 14.5-oz cans diced tomatoes
  • 1 15-oz can red kidney beans, undrained
  • 1 15-oz can great northern beans, undrained
  • 2 15-oz cans tomato sauce
  • 1 Tbsp. white vinegar
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 1/2 tsp. dried thyme
  • 2 cups water
  • 1/2 lb. small macaroni or ditalini pasta

Instructions

  • Soften onion in olive oil in a large sauce pan over medium-high heat. Add beef and cook, breaking up meat until browned. Drain off any fat. Add onion, carrot, celery and garlic. Sauté for about 10 minutes on medium heat.
