Instructions

  1. Boil 4 cups of water. Add salt and the uncooked farro. Turn heat down to medium-low and simmer for 15 minutes, or until the farro is tender. Drain the farro and set aside to cool completely.
  2. In a large bowl, combine the halved tomatoes, diced cucumbers, green onions, chopped parsley, salt, pepper, garlic powder, fresh lemon juice, and olive oil. Add in the cooked and cooled farro and toss gently to combine all ingredients. Serve immediately and enjoy!
