Ingredients

  • 1 pound ground beef I used 85% lean sirloin, for a good balance of flavor and leanness
  • 3-4 Tbsp. pesto use your favorite homemade or high-quality store-bought brand
  • salt and pepper to taste, for seasoning the beef
  • monterey jack cheese can use other kinds too, like provolone or mozzarella; I used what I had on hand

Instructions

  • Prepare the Grill: Preheat your grill to medium-high heat. While it’s heating, cut your block of Monterey Jack cheese into 4 equal, thick chunks. Set them aside for stuffing.
  • Mix the Patties: In a large mixing bowl, gently combine the ground beef, pesto, and a generous sprinkle of salt and pepper. Use your hands to mix, but be careful not to over-mix, as this can lead to tough burgers. Just enough to evenly distribute the pesto and seasonings.
  • Stuff and Shape: Divide the seasoned ground beef mixture into 8 equal portions. Form each portion into a thin patty. Take one of your cheese chunks and place it in the center of one thin patty. Carefully top it with another thin patty, then press and seal the edges all the way around, ensuring the cheese is completely enclosed and hidden inside the patty. This creates one larger, cheese-filled burger patty. Repeat this process with the remaining beef and cheese until you have four beautifully stuffed patties.
  • Grill to Perfection: Place the cheese-stuffed pesto burgers on the pre-heated grill. Grill for about 5-7 minutes per side, or until they reach your desired doneness and are cooked through, with the cheese inside beautifully melted. Be careful not to press down on the burgers with your spatula, as this will squeeze out the delicious juices.
