Happy Saturday, friends! As another week begins, it’s that wonderful time again – time for our Healthy Weekly Meal Plan! While I usually dive straight into the recipes, this particular Saturday holds a significant personal moment for me. This morning, my family and I are attending my grandfather’s funeral in Mesa, Arizona, where I grew up. We drove through the night to be here, arriving just past midnight.
Many have offered their condolences for my loss, but in truth, it’s a day filled with gratitude and celebration. My grandpa lived a long and incredible life, reaching 96 years old! He leaves behind an astonishing legacy of 9 children, 62 grandchildren, and over 130 great-grandchildren. What an extraordinary family tree to be a part of! My grandma passed away when I was just 12, and my grandpa missed her deeply, speaking of her constantly. During our visits, he would recount stories from their life together, always ending with how much he yearned to be reunited with her. I find immense peace in knowing he’s finally with her again on the other side. This short trip, though bittersweet, offers a precious opportunity to spend time with my siblings and extended family, reminding me of the wonderful bonds we share.
Despite the emotional weekend, I know that when I return home, having this Healthy Weekly Meal Plan ready will be a huge comfort.
