Ingredients

Burger Ingredients:

  • 1 pound lean ground chicken
  • 2 green onions diced (whites & greens)
  • 2 Tbsp. diced shallot
  • 2 tsp. minced garlic
  • 1 Tbsp. chili powder
  • 1 tsp. cumin
  • 1/2 tsp. Mexican oregano
  • 1/2 tsp. ground coriander
  • 1/4 tsp. black pepper
  • 1/4 tsp. kosher salt
  • 1/4 cup cilantro chopped

Chipotle Mayo Ingredients:

  • 1 Tbsp. chopped chipotles in adobo sauce
  • 2 Tbsp. light mayonnaise
  • Juice from 1/2 lime about 1 Tbsp.

Other Items Needed:

  • 2 pasilla peppers or other similar pepper
  • Hamburger Buns for serving
  • Condiments/Toppings for serving

Instructions

  • In a large bowl, combine the lean ground chicken with all the other burger ingredients (green onions, shallots, minced garlic, chili powder, cumin, Mexican oregano, ground coriander, black pepper, kosher salt, and chopped cilantro). Using your hands, lightly mix until just combined, being careful not to overmix, which can make the burgers tough. Form the mixture into four equally sized burger patties and place them in the freezer for about 10-15 minutes. This helps them firm up and hold their shape better on the grill.
  • While the patties are chilling, preheat your grill or grill pan to medium-high heat. Place the pasilla peppers directly on the hot grates and roast them for a few minutes, rotating occasionally, until their skins are visibly charred and blistered on all sides. Once charred, remove the peppers from the grill, place them on a plate, and immediately cover them tightly with plastic wrap. Let them steam for about 5-10 minutes – this step softens the peppers and makes peeling the skin much easier (if desired).
  • Carefully grease your preheated grill grates. A good tip is to dampen a folded paper towel with a little oil and use long-handled tongs to wipe down the hot grates. This prevents the chicken burgers from sticking. Remove the patties from the freezer and place them on the greased grill. Grill for approximately 5-7 minutes per side, or until they are cooked through and reach an internal temperature of 165°F (74°C). The cooking time will vary depending on the thickness of your patties and the heat of your grill.
  • While the burgers are grilling, prepare the chipotle mayonnaise. In a small bowl, combine the chopped chipotles in adobo sauce, light mayonnaise, and fresh lime juice. Stir well until all ingredients are thoroughly mixed and smooth. Taste and adjust seasoning if needed. Set aside.
  • Once the steamed peppers are cool enough to handle, carefully remove the plastic wrap. Slice off the stems and cut each pepper in half lengthwise. Discard the seeds and any membranes from the center. Then, slice the peppers into thin strips, ready for topping your burgers.
  • When the chicken fajita burgers are fully cooked and removed from the grill, it’s time to assemble! Serve them hot on your favorite hamburger buns. Top each burger generously with the sliced roasted pasilla peppers, a dollop or drizzle of the zesty chipotle mayonnaise, and any other desired condiments or toppings such you enjoy, such as fresh avocado slices, a sprinkle of cotija cheese, or crisp lettuce.
