Ingredients

  • ½ Tbsp. olive oil
  • 2 garlic cloves minced
  • 1 onion diced
  • 1 butternut squash peeled and diced into cubes
  • 32 ounces vegetable broth
  • 1-2 tsp. salt

Instructions

  • In a Dutch oven or any heavy-bottomed pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, stirring occasionally. Cook until the onion is softened and translucent, and the garlic is fragrant, typically about 5 minutes. Be careful not to let the garlic brown.
  • Next, add the cubed butternut squash and pour in the vegetable broth. Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the butternut squash is very tender and easily pierced with a fork.
  • Carefully transfer the entire contents of the pot into a high-powered blender (like a Vitamix) or use an immersion blender directly in the pot. Add 1-2 teaspoons of salt, or to taste. Start with less and add more if needed.
