Ingredients

  • 2 Tbsp. butter
  • 2 Tbsp. olive or avocado oil
  • 1 onion finely diced
  • 1 tsp. salt
  • 3/4 tsp. black pepper
  • 1 tsp. poultry seasoning
  • 3 garlic cloves minced
  • 10.5 ounce can cream of chicken soup
  • 1/2 cup light sour cream
  • 4 ounce diced green chilies undrained
  • 2 cups milk
  • 2.5 cups mozzarella cheese divided
  • 1/3 cup parmesan cheese shredded
  • 3 cups chicken, cooked and shredded (I use a rotisserie chicken)
  • 3 cups rotini pasta uncooked

Breadcrumb Topping:

  • 1 cup Italian style panko bread crumbs
  • 6 Tbsp. butter melted

Instructions

  • In a large skillet, melt the butter and oil together over medium heat. Add the finely diced onion and cook, stirring occasionally, until the onion is tender and translucent, about 5-7 minutes. Stir in the salt, black pepper, and poultry seasoning. Cook for another minute, then add the minced garlic and cook until fragrant, about 30 seconds to 1 minute, being careful not to burn it.
  • Meanwhile, bring a large pot of salted water to a rolling boil. Add the rotini pasta and cook according to package directions until al dente. Preheat your oven to 375º F (190º C).
  • To the onion and garlic mixture in the skillet, add the can of cream of chicken soup, light sour cream, and the undrained diced green chilies. Slowly whisk in the milk, about a half cup at a time, until the sauce reaches your desired creamy consistency and is well combined.
  • Once the sauce is smooth, stir in 2 cups of the shredded mozzarella cheese and all of the shredded parmesan cheese. Continue stirring until the cheeses have melted and are fully incorporated into the creamy sauce. Turn off the stovetop heat and remove the skillet from the burner.
  • Once the pasta is cooked, drain it thoroughly. Add the drained pasta and the 3 cups of cooked, shredded chicken to the creamy cheese sauce in the skillet. Toss everything together gently until the pasta and chicken are evenly coated. Pour this delicious mixture into a 9×13 inch casserole dish, spreading it out evenly. Top with the remaining 1/2 cup of mozzarella cheese.
  • (Optional) For the Breadcrumb Topping:
