Whether you’re packing lunches for school or work, searching for an easy after-school snack, or need a quick bite for game night, pizza pockets are incredibly versatile. Mastering the Dough: Store-Bought Convenience vs. Homemade Freshness

One of the beauties of making homemade pizza pockets is the flexibility you have with the dough. You can streamline the process significantly by opting for store-bought pizza dough, readily available in the freezer section of most grocery stores. This pre-made option saves valuable time and effort, making homemade pizza pockets accessible even on the busiest days. Simply thaw, roll, and fill!

Another excellent shortcut is using puff pastry dough. Its delicate, flaky layers create a distinctly different texture than traditional pizza crust, offering a gourmet twist to your pizza pockets. The thin sheets bake up wonderfully golden and airy, providing a delightful contrast to the rich filling.

However, if you’re feeling a bit more adventurous and have a few extra minutes, making your own pizza dough from scratch is incredibly rewarding and surprisingly simple. There’s a unique satisfaction in working with fresh dough, and the flavor and texture of homemade crust are truly unmatched. I’ve included my favorite easy whole wheat pizza crust recipe within this post because it’s my go-to and takes mere minutes to prepare. Don’t let the idea of making dough be an obstacle; it’s an enjoyable part of the culinary journey that guarantees exceptional results!

Regardless of whether you choose homemade or store-bought dough, consider making a larger batch. The convenience of having pre-made dough or a freezer full of ready-to-bake pizza pockets for those spontaneous cravings is unbeatable. Simply reach into the freezer, pop a pocket into the microwave or oven, and enjoy a warm, delicious meal with minimal effort.

For those prioritizing health without compromising on flavor, I wholeheartedly recommend using Laura’s Lean Ground Beef. This premium beef not only adheres to strict standards for being low in fat, but it’s also sourced from farmers who raise their cattle without the use of hormones or antibiotics. Plus, their cattle are always vegetarian-fed, ensuring a high-quality, responsible choice for your kitchen.

Crafting the Perfect Filling: Sauce, Meat, Cheese & Beyond

The true magic of pizza pockets lies in their filling. This is where your creativity can shine! Just like a traditional pizza, the possibilities for what you can stuff inside are virtually endless. If a pizza can boast everything from delicate walnuts to savory anchovies on its surface, then surely any flavor combination can be lovingly encased within your homemade pocket.

The Foundation: Flavorful Sauce

Even if you start with a jarred marinara or a pre-made white sauce, a little customization can elevate it to new heights. Transform a basic sauce into something extraordinary by adding a pinch of cayenne pepper for a subtle kick, or some chopped olives and capers for a briny depth. Finely diced mushrooms, onions, or fresh herbs like parsley or oregano can infuse your sauce with layers of flavor that taste distinctly homemade. For that authentic, classic pizza profile, ensure your sauce includes garlic, thyme, basil, and rosemary – these aromatics are essential for capturing that irresistible Italian essence. Remember, just as with any great pizza, the sauce truly makes the pizza pocket!

Premium Protein: Featuring Laura’s Lean Ground Beef

For meat lovers, classic choices like sausage, pepperoni, or crumbled meatballs are always a hit. In this specific pizza pocket recipe, we’ve opted for a delicious combination of classic marinara sauce with savory Laura’s Lean Ground Beef, complemented by layers of pepperoni and generous amounts of cheese. Using Laura’s Lean Ground Beef isn’t just about reducing fat; it’s about choosing a high-quality protein that brings robust, clean flavor to your filling. Its commitment to raising cattle without hormones or antibiotics and ensuring a vegetarian diet means you’re starting with a superior ingredient that contributes to a truly delicious and wholesome pizza pocket experience.

Cheesy Perfection & More Toppings

When it comes to cheese, the same rules apply as for a traditional pizza. A blend of shredded mozzarella and provolone offers that perfect gooey, stretchy texture, while a sprinkle of grated Parmesan adds a salty, nutty kick. For a more adventurous twist, consider adding some crumbled goat cheese; it melts into a wonderfully creamy consistency and provides a delightful tang that truly elevates the flavor profile.

Don’t stop there! Think about other amazing ingredients you love on pizza: sautéed bell peppers and onions, black olives, spinach, or even a sprinkle of red pepper flakes for an extra zing. The beauty of pizza pockets is that each one can be a personalized culinary creation!

Assembly & Pro Tips for Perfect Pockets

Achieving a perfectly sealed and beautifully baked pizza pocket is simpler than you think with a few handy tricks:

  • Quality Ingredients First: As mentioned, starting with high-quality ingredients, like Laura’s Lean Ground Beef, is the easiest route to consistently delicious results. The rich flavor and lean profile of premium beef elevate the entire dish, creating a noticeable difference in taste that lasts for days after cooking. Seriously, it’s a game-changer.
  • Secure the Seal: To ensure your delicious filling stays perfectly contained during baking, use an egg wash along the edges of your dough before placing the top layer. The egg acts as a natural glue, creating a strong seal. Once the dough layers are together, use the tines of a fork to firmly press and crimp the edges. This not only creates a robust seal but also adds a charming, rustic ridge pattern, much like the top of a homemade pie.
  • Ventilation is Key: While not strictly necessary, poking a small hole or two on the top of each pizza pocket with a fork before baking can be beneficial. This allows steam to escape during cooking, preventing the pockets from puffing up excessively and potentially bursting, ensuring an even bake.
  • Freezing for Future Feasts: For optimal freezing, first allow your freshly baked pizza pockets to cool completely in the refrigerator. Once chilled, stack them in an airtight container for the freezer. To prevent them from sticking together, sprinkle a tiny bit of flour between each layer as you stack them. This simple step makes it incredibly easy to grab just a few at a time when you’re ready to reheat and enjoy.
  • Baking Perfection: Bake your pizza pockets at 450°F (230°C) for approximately 10-12 minutes, or until the crust is beautifully golden brown and the filling is heated through and bubbly. The precise time may vary depending on your oven and the size of your pockets, so keep an eye on them!

Unleash Your Creativity: Pizza Pocket Variations!

The beauty of pizza pockets lies in their adaptability. Don’t limit yourself to just one type of filling! Here are some creative ideas, including some from my other recipes, that you can easily adapt for your next batch of homemade pizza pockets:

  • Creamy Avocado Sauce Pockets: Take inspiration from our Tortellini with Avocado Sauce. Imagine that vibrant, creamy sauce tucked inside a pocket, perhaps with some grilled chicken or black beans for a unique, fresh twist!
  • Pesto Perfection: Our Pesto Pizza recipe is a fantastic starting point. A basil pesto base, mozzarella, sun-dried tomatoes, and maybe some artichoke hearts would make for an incredibly flavorful pocket.
  • BBQ Chicken Delight: Channel your inner California Pizza Kitchen with a Grilled Barbecue Chicken Pizza-inspired pocket. Shredded chicken, tangy BBQ sauce, red onion, and smoked gouda cheese would be an absolute sensation!
  • Breakfast Bliss Pockets: Why limit pizza pockets to lunch and dinner? Fill them with scrambled eggs, cooked sausage or bacon, and cheddar cheese for a portable and delicious breakfast on the go!
  • Veggie Extravaganza: Load up on your favorite vegetables! Sautéed bell peppers, mushrooms, onions, spinach, and olives with a robust marinara sauce and a blend of Italian cheeses create a healthy and satisfying vegetarian option.
  • Spicy Chorizo & Manchego: For a Spanish-inspired twist, try cooked chorizo, a touch of spicy tomato sauce, and shredded Manchego cheese.

  • 1/2 cup pepperoni
  • 1 egg beaten

Instructions

Pizza Pocket Crusts

  • Dissolve the sugar and yeast in the warm water in a measuring cup, let rest for 8 minutes.

  • Heat a large skillet on medium-high. Spray with cooking spray. Add in one pound of Laura’s Lean Beef. Break up the beef and cook until brown.
  • Add in salt, pepper, rosemary, thyme and basil. Pour in marinara sauce and let simmer until flavors blend.

Assembling Pizza Pockets

  • Place a large scoop of the beef mixture onto six of the twelve pizza squares.
  • Top with cheese and pepperoni slices.
  • Spread a little of the beaten egg on the edges of the dough. Place another square of dough on top and using a fork, press the edges together.
  • Continue until all six pizza pockets are finished.
  • Bake at 450 degreees for about 10-12 minutes, or until they’re browned and heated through the middle. Serve and enjoy!
