I have a little confession to make. There was a time when I prided myself on being the most organized and motivated mom around. My mornings were a symphony of homemade delights – whipping up batches of fluffy pancakes or perfectly golden waffles from scratch. I’d meticulously pack creative and nutritious lunches for my boys, embodying the very definition of a supermom. But as time marches on and my children grow older, gaining more independence and maturity, I’ve found myself slowly relinquishing those daily duties. The boys are now capable of handling many things on their own.
It feels incredibly strange to no longer be as hands-on with their morning routines. These days, my sons wake up, prepare their own breakfasts, and pack their lunches. While there’s a certain bittersweetness to this newfound freedom – fewer responsibilities for me, but also a poignant reminder of how quickly they’re growing up – it has also highlighted a change in my own habits. With less focus on preparing elaborate meals for them, I’ve admittedly fallen into the bad habit of skipping breakfast entirely. Who else can relate? I often find myself glancing at the clock, realizing it’s already 2 PM, and I haven’t eaten a single thing. Nothing! This isn’t a healthy pattern, and I know I need to make a change for my own well-being.
To combat this unhealthy habit and ensure I’m nourishing my body properly, I’ve made a conscious effort to prioritize breakfast. And that’s where this incredible Egg, Bacon, and Avocado Breakfast Sandwich comes into play! It’s the perfect solution for a busy lifestyle, offering maximum flavor and nutrition with minimal effort. This isn’t just a “recipe” in the traditional sense; it’s more of a brilliant assembly of beloved breakfast essentials, all piled high on a perfectly buttered whole wheat English muffin. The combination of textures and flavors in this sandwich is truly remarkable – the crispness of bacon, the rich creaminess of avocado, and the savory goodness of a fried egg. It’s an easy breakfast idea that tastes gourmet!
This sandwich is so much more than the sum of its parts. It’s a complete meal, offering a fantastic balance of protein, healthy fats, and complex carbohydrates to keep you feeling full and energized throughout the morning. The beauty of this recipe lies in its simplicity and the quality of its ingredients. Using fresh, ripe California Avocados adds a luxurious creaminess and a boost of heart-healthy monounsaturated fats. This isn’t just a morning fix; it’s a breakfast experience you’ll want to recreate again and again, whether for a quick weekday start, a leisurely weekend brunch, or even a satisfying lunch or dinner!
Let’s talk about the magic behind this sandwich. I start by pan-frying both regular crispy bacon and savory Canadian bacon. Cooking the regular bacon first renders out that incredible fat, which then becomes the perfect medium for frying the eggs. There’s truly nothing better than eggs cooked in flavorful bacon fat – it imparts a depth of taste you just can’t achieve otherwise. While the eggs are cooking to your desired doneness (whether you prefer a perfectly runny yolk or a firmer set), I also take a moment to prepare the English muffin. In the same frying pan, I melt a little butter and toast the halved whole wheat English muffin until it’s golden brown and delightfully crispy on the edges. This buttered and toasted muffin provides the ideal base, offering a slight crunch and a soft interior to absorb all the wonderful flavors of the fillings. The warmth and texture of each component come together to create a truly irresistible breakfast sandwich.
Preparing this breakfast sandwich is incredibly straightforward, making it an ideal option for even the busiest mornings. The combination of textures – the crispiness of the bacon, the softness of the egg, the creamy coolness of the avocado, and the chewy toastiness of the English muffin – creates a symphony of sensations with every bite. The savory notes from both types of bacon complement the rich egg and the fresh, subtle sweetness of the avocado, all brought together by the comforting warmth of the buttered bread. It’s a simple recipe, but the thoughtful combination of high-quality ingredients makes all the difference, transforming a basic breakfast into an extraordinary culinary delight. It’s a testament to how easily you can create something truly special and nourishing at home, encouraging healthy eating habits without sacrificing flavor or convenience. This sandwich is not only delicious but also incredibly satisfying, keeping you full and focused until your next meal. It truly embodies the idea of starting your day right, providing both energy and pure enjoyment.
Crafting Your Perfect Egg, Bacon, and Avocado Breakfast Sandwich: A Simple Guide
Assembling this magnificent breakfast sandwich is the final, delightful step. Once all your components are perfectly cooked and prepared, it’s time to layer them into a masterpiece. Here’s how to create the ultimate Egg, Bacon, and Avocado Breakfast Sandwich:
- **Start with the Base:** Begin by placing the toasted bottom half of your whole wheat English muffin on your plate. Its buttery, crispy surface is ready to cradle the delicious fillings.
- **Layer the Bacon:** Next, arrange a generous portion of the crispy regular bacon slices directly onto the muffin. The crunch will be a welcome textural contrast.
- **Add the Egg:** Carefully place your perfectly fried egg (or eggs, if you’re feeling extra hungry!) on top of the crispy bacon. The warm, yolky goodness is central to this sandwich’s appeal.
- **Canadian Bacon’s Turn:** Now, add the savory sliced Canadian bacon. Its milder, ham-like flavor provides a wonderful complement to the richer regular bacon.
- **Crown with Avocado:** This is where the magic of California Avocados comes in! Top everything with several slices of fresh, creamy California Avocado. For an extra burst of flavor, you can season the avocado with a pinch of salt and freshly ground black pepper.
- **Complete the Sandwich:** Finally, gently place the other half of the toasted English muffin on top. Press down lightly to bring all the layers together.
And just like that – boom, done! Your incredible breakfast is served. There truly is something magical that happens when the two distinct bacons come together with a perfectly runny egg yolk, the luxurious creaminess of a fresh California Avocado, and a warm, buttered English muffin. I’m practically salivating just thinking about it! Do yourself a huge favor and make one of these delightful breakfast sandwiches very soon. You absolutely won’t regret it; I promise it will become a new favorite in your morning rotation.

Ingredients
- 1 whole wheat English muffin
- 1 Tbsp. butter
- sliced Canadian bacon
- sliced bacon
- 1-2 eggs
- California Avocado sliced
Instructions
-
In a frying pan over medium heat, cook both the regular sliced bacon and Canadian bacon until the regular bacon is crispy and the Canadian bacon is lightly browned. Once cooked, remove the bacon from the pan and set aside on a paper towel-lined plate to drain excess fat.
-
Using the residual bacon grease in the same frying pan, fry 1-2 eggs to your preferred doneness (sunny-side up, over easy, or scrambled). Once cooked, carefully remove the eggs and set them aside. Cut your whole wheat English muffin in half. In the now-empty frying pan (still containing a little bacon grease if desired), add the butter. Once melted, place the English muffin halves face down and toast them until golden brown and crispy.
-
To assemble your delicious sandwich: Place the toasted bottom half of the English muffin on your serving plate. Layer the crispy regular bacon on top, followed by the fried egg(s). Next, add the Canadian bacon. Finish by carefully placing slices of fresh California Avocado on top. Crown with the other half of the toasted English muffin. Serve immediately and enjoy while warm! You may add a sprinkle of salt and pepper to the avocado if desired.
