I recently returned from the most wonderful weekend getaway in Palm Springs with my beloved family, and I’m already dreaming of going back! We decided to treat ourselves by renting a luxurious poolside room at the Omni resort. This place truly knew how to do pools – it boasted a massive main pool, thrilling water slides that kept the boys entertained for hours, a fun splash pad for the younger crowd, and a wonderfully relaxing lazy river. It was absolutely ah-mazing, a perfect escape from our daily routine.

Now that my two energetic boys are a little older, we’ve bypassed the nap phase, which makes these types of trips so much more enjoyable. We can truly immerse ourselves in all the fun activities without constantly rushing back for feedings or nap times. It’s incredibly rewarding to see them understand and appreciate these experiences more fully, creating lasting memories together as a family. There’s a certain magic in watching their faces light up as they discover new adventures, and that’s exactly what this trip delivered.

Being back home now, I find myself yearning for those sunny, carefree days in Palm Springs! Even with the temperatures soaring above 100 degrees, the pools provided a refreshing sanctuary where we could “chillax” to our hearts’ content. Oh, and we finally got to see Jurassic World, which was an added bonus to an already fantastic trip! Those moments of shared joy and relaxation are truly priceless, and I’m already planning our next escape.

However, with the vacation fading into memory, the 4th of July swiftly approaches, and with it, a wave of mixed emotions. Almost every year for this holiday, I find myself missing my oldest son. He travels to Utah to spend an entire month with his dad, and while I understand and support it, it always leaves a significant void. The first week is always the hardest; I often find myself tearing up daily, missing his presence deeply. It’s astonishing how one child’s absence can create such a profound emptiness in the heart. I’ll be getting ready to head somewhere and suddenly realize someone is missing. Or I’ll instinctively call out his name in the house, only to remember he’s not there.

He truly is my rock, and over the years, I’ve grown to rely on him not just for help around the house, but as a trusted confidant. We share an incredibly strong bond, and I cherish our relationship immensely. His insightful perspectives and steady presence are something I deeply love and appreciate. On the other hand, I know he looks forward to this annual trip with immense excitement, eager to see his other family. I consider myself incredibly fortunate to have him for the majority of the year, so I truly have no grounds for complaint, right?

Despite my rational thoughts, I’ll miss him like crazy, but I know I’ll be okay. It’s only a month, after all… right?! Ugh, it feels so long sometimes! To cope with my sorrows and celebrate the spirit of the holiday, I’ll turn to a comforting and delicious solution: bundt cake! It’s both his favorite and mine, a perfect treat to make the 4th of July feel complete, even with a cherished family member away. Baking has always been a wonderful way to channel emotions and create something beautiful to share.

This particular bundt cake is exceptionally amazing because it showcases the vibrant red, white, and blue colors – a true patriotic spectacle! But here’s the best part: it’s made from a simple cake mix, which earns it two big thumbs up in my book for ease and convenience. Hence the “EASY” in its name! While it might not be the healthiest option (if you’re seeking that, be sure to check out this skinny bundt cake recipe), it *IS* super fun, wonderfully festive, and perfectly patriotic.

Making this red, white, and blue cake is incredibly straightforward, requiring just a white cake mix, a few drops of food coloring, and a handful of basic ingredients for the simple yet delicious glaze. This minimal ingredient list and uncomplicated process make it an ideal choice for anyone needing a quick, last-minute dessert for their 4th of July weekend celebrations. Imagine the joy of serving a homemade-looking, beautifully layered cake that took minimal effort to prepare. It’s perfect for busy hosts who want to add a special touch without spending hours in the kitchen.

A fun, easy red white & blue cake that you can whip together for a last minute, delicious 4th of July dessert!

Course: Dessert

Ingredients

  • 1 box white cake mix
  • ingredients required from cake mix oil, egg whites
  • red food coloring
  • blue food coloring
  • 2 cups powdered sugar
  • 2-4 Tbsp. fat-free milk
  • 1/2 tsp. vanilla extract

Instructions

  • Heat oven to 325ºF. Generously spray a bundt cake pan with cooking spray.
  • Make cake mix according to the box directions, using water, oil and egg whites.
  • Pour 1 1/4 cup of the batter into a small bowl and color it red with food coloring.
  • Pour 1 cup of batter into another bowl and mix in blue coloring.
  • Pour red batter into the bottom of the prepared pan. Carefully pour white batter over red batter in pan.
  • Now, carefully pour blue batter over white – it doesn’t need to cover the white all the way.
  • Bake as directed on box, or until toothpick comes out clean. Cool until warm and them flip over onto a serving platter or plate.
  • When cake is cool, combine powdered sugar, milk and vanilla in medium bowl and mix until fully incorporated. I like to add the milk one tablespoon at a time to make sure it doesn’t get too runny. If glaze isn’t runny enough, add more milk and if it’s too runny, add more powdered sugar.
  • Drizzle over the top of the cake. Slice and serve.
