Ingredients

  • 1 head cauliflower cut into florets
  • 3/4 cup leeks diced
  • 1 8-oz container cremini mushrooms (aka baby bella mushrooms), sliced
  • 1 Tbsp. olive oil
  • 2 Tbsp. all-purpose flour
  • 1 cup milk
  • 1 egg
  • 2 cups Sargento Sharp Cheddar Cheese divided
  • 1 tsp. salt
  • 1/2 tsp. pepper

Instructions

  • Preheat oven to 350ºF (175ºC).
  • Boil water in a large pot. Add cauliflower florets and boil for 5-7 minutes, or until they are crisp-tender. Drain thoroughly and transfer the cooked cauliflower into a 2.5 quart casserole dish.
  • Meanwhile, heat olive oil in a skillet over medium heat. Add the sliced mushrooms and diced leeks. Sauté for 5-7 minutes, or until they are softened and fragrant. Drain any excess liquid from the pan. Pour the sautéed mushroom and leek mixture evenly over the cauliflower in the casserole dish.
  • In a medium-sized bowl, whisk together the all-purpose flour, milk, and egg until smooth. Stir in 1 cup of Sargento Sharp Cheddar Cheese, along with the salt and pepper. Pour this creamy cheese sauce evenly over the cauliflower and mushroom mixture in the casserole dish. Gently stir everything together to ensure all ingredients are coated. Finally, top the casserole with the remaining 1/2 to 1 cup of Sargento Sharp Cheddar Cheese. Bake in the preheated oven for 25 minutes, or until golden brown and bubbly.
