Ingredients

  • 2 cups sliced strawberries
  • 1 cup pineapple chunks + a little extra pineapple juice
  • sweetener of your choice Truvia, honey, sugar, etc
  • low-fat vanilla yogurt
  • 1 cup blueberries
  • 1/2 a banana
  • 1/2 tsp. lemon juice

Instructions

  • In a blender or food processor, blend together strawberries and pineapple. Add in a little juice if it needs it to reach desired consistency. Add in some sweetener to taste, if desired. Pour this red mixture into the bottom of your popsicle molds, filling about one-third of each mold. Place in the freezer for about 30-60 minutes, or until partially set.
  • Once the red layer is slightly firm, carefully spoon or pour the low-fat vanilla yogurt into the middle section of each popsicle mold, filling another one-third. Return the molds to the freezer for another 30-60 minutes to allow the yogurt layer to partially set.
  • While the yogurt layer is setting, prepare the blueberry layer. In a clean blender or food processor, combine blueberries, banana, and lemon juice. Blend until smooth. Taste and sweeten if necessary. Fill the remaining top section of each popsicle mold with this blueberry mixture. Insert popsicle sticks and place the molds in the freezer for at least 4-6 hours, or preferably overnight, until fully frozen and solid.
  • When ready to serve, run some warm water over the bottom of the popsicle mold for a few seconds. This will slightly loosen the popsicles from the mold. Carefully pull out each popsicle, serve immediately, and enjoy your refreshingly healthy treat!
