Ingredients

  • CRUST:
  • 1/4- oz package dry active yeast
  • 1/4 tsp sugar
  • 3/4 cup warm water 110 degrees
  • 1-3/4 cups all-purpose flour
  • 1/2 tsp. salt
  • 1 Tbsp. olive oil
  • TOPPINGS:
  • 3 Perdue Perfect Portions Mesquite Grille Seasoned Chicken Breasts
  • 3/4 cup BBQ sauce + plus a little more for spreading on crust
  • about 1/2 red onion super thinly sliced
  • 1/4 cup chopped cilantro
  • 1/2 – 1 cup finely shredded Mozzarella cheese

Instructions

  • Dissolve the sugar and yeast in the warm water in a measuring cup, let rest for 8 minutes. This brief activation step is crucial for giving your no-rise crust a light and airy texture.
  • Meanwhile, heat up your grill to medium-high heat. Lightly spray the grill grates with cooking spray to prevent sticking. Place 3 Perdue Perfect Portion chicken breasts directly on the hot grill and cook for approximately 3-4 minutes per side, or until thoroughly cooked through and the juices run clear. The pre-marinated chicken makes this step incredibly fast and flavorful.
  • While the chicken is cooking, prepare your pizza dough. In a medium-sized bowl, combine the all-purpose flour and salt. Pour the yeast mixture over the flour mixture. Add the olive oil and mix everything together thoroughly until a cohesive dough forms. Transfer the dough to a lightly floured surface and knead for just 2 minutes. The best part? You do NOT need to let this dough rise, saving you valuable time!
  • To prepare for grilling the crust, take two long pieces of tin foil and lay them overlapping each other to create a large, sturdy square. Spray the foil liberally with cooking spray to prevent the dough from sticking. Press or roll your prepared dough out into a large, even circle, about 1/2 inch thick, on top of the greased foil. Spray the top of the dough with cooking spray as well. Carefully, holding each end of the foil, place the dough (foil-side down) onto the preheated grill. Close the grill lid. Cook for a couple of minutes, checking periodically, until the bottom of the crust is nicely browned and cooked to your liking. If your grill has hot spots, gently rotate the pizza for even cooking.
  • While the crust is cooking on the grill, chop your perfectly cooked Perdue chicken breasts into small, bite-sized cubes. In a separate bowl, mix the chopped chicken with 3/4 cup of your favorite barbecue sauce until all the chicken pieces are well coated.
  • Once the crust is lightly browned and firm, carefully flip it over using two spatulas (this takes a little practice but is easier than it sounds). Squirt a little extra barbecue sauce directly onto the flipped crust and spread it evenly with a spatula, creating a flavorful base. Next, pour the sauce-covered chopped chicken mixture onto the pizza and spread it out evenly across the crust.
  • Give the pizza a nice sprinkle of finely shredded Mozzarella cheese. Then, artfully arrange the super thinly sliced red onions over the cheese. Finish with a generous scattering of chopped cilantro and another light sprinkle of cheese. Close the grill lid again and let it cook for a few more minutes, or until the cheese has completely melted and the pizza is heated through and bubbly. The trapped heat will create a perfectly gooey top.
  • Once done, carefully pull the foil off the grill and place the entire pizza on a flat, heat-safe surface like a cutting board. Allow it to cool for a minute or two before slicing into your desired pizza wedges. Serve immediately and enjoy this incredible homemade grilled BBQ chicken pizza!
