I know it might seem a little early to talk about Easter, especially when we haven’t even celebrated St. Patrick’s Day yet, but my excitement for this springtime holiday is simply boundless! There’s an undeniable magic that surrounds Easter, a unique charm that sets it apart. While every holiday carries its own special appeal – even the festive green of St. Patrick’s Day – Easter feels particularly enchanting. It truly marks the beginning of spring, a season of renewal, fresh starts, and vibrant colors. The weather often shifts to glorious sunshine and gentle breezes, making everything feel light and hopeful.

And of course, we can’t forget the star of the show for many families: the Easter Bunny! While my older two boys have certainly outgrown their belief in a magical bunny delivering baskets, my younger two are absolutely immersed in the wonder and anticipation of his arrival. This joyful anticipation is what makes preparing for Easter so much fun, and finding simple, delicious recipes like this Bunny Bait makes the celebration even sweeter.

This year, our family plans to celebrate Easter in sunny Arizona, where we’ll be visiting my wonderful family. I’m incredibly thrilled for this trip, especially since I missed out on Thanksgiving and Christmas gatherings. There’s nothing quite like the warmth of family, and I’m really looking forward to reconnecting with my siblings and parents, creating new memories together. Easter with family always means a flurry of activities, especially the traditional egg hunts!

We usually organize an egg hunt or two, catering to different age groups. The little ones get their own special hunt, filled with colorful, candy-packed eggs, which the older kids often enjoy helping to hide and discover. Then, the older kids embark on a more challenging hunt, with eggs cleverly concealed and containing exciting surprises like money – a definite crowd-pleaser! After all the excitement and scrambling for eggs, there’s always, always a spread of delicious treats and snacks waiting to be devoured. This is where a simple, crowd-pleasing recipe truly shines, offering something for everyone to munch on while sharing stories and laughter.

I’m already planning my contribution to this year’s Easter feast, and I’m thinking this super easy Bunny Bait Easter Snack Mix will be absolutely perfect. It’s not just easy to whip up; it tastes unbelievably good, making it an instant favorite among all ages. The beauty of this recipe lies in its simplicity and the harmonious blend of textures and flavors. It starts with a base of classic Chex cereal and wholesome Cheerios, providing that satisfying crunch. We then add crisp pretzel sticks for a delightful salty contrast, and a handful of dry-roasted peanuts to introduce a nutty richness and another layer of crunch. The final touch of magic comes from the vibrant, pastel-colored M&M’s, which are not only visually appealing but also add a burst of chocolatey sweetness.

All these wonderful ingredients are generously tossed in a smooth, melted white chocolate coating, binding everything together into an irresistible cluster of goodness. Yes, it’s truly as easy as it sounds, and the result is nothing short of delicioso! This recipe makes a giant batch of snack mix, which is ideal for sharing. I love packaging it up into festive bags and handing it out to friends, neighbors, or even my boys’ amazing preschool teachers. One year, after I delivered a batch to the school, one of the teachers called me an hour later, laughing and confessing that she simply couldn’t stop eating it. That’s the kind of irresistible charm this Bunny Bait possesses – it just keeps you coming back for more!

Beyond being incredibly tasty, Bunny Bait is remarkably versatile. It’s fantastic for Easter brunch, an afternoon snack, or even as a thoughtful homemade gift. The pastel M&M’s make it undeniably festive, but you could easily adapt this recipe for other holidays by simply changing the M&M colors or adding seasonal sprinkles. Imagine red and green M&M’s for Christmas, or orange and black for Halloween! But for Easter, those soft, spring colors are just perfect, adding a cheerful touch to every bite. The combination of sweet and salty, crunchy and creamy, makes it a sensory delight that appeals to everyone. It’s quick to prepare, requires no baking, and can be made ahead of time, which is a huge bonus during busy holiday seasons.

Servings: 1 giant batch of snack mix
Author: Jenn

Ingredients

  • 5 cups Rice Chex
  • 5 cups plain Cheerios
  • 2 cups pretzel sticks
  • 1 cup dry roasted lightly salted peanuts
  • 1 11-oz bag Easter colored M&M’s
  • 1 16-oz package Candiquik white chocolate (or 1 bag white chocolate chips) melted

Instructions

  • In a large mixing bowl, combine the first four ingredients: Rice Chex, plain Cheerios, pretzel sticks, and dry roasted lightly salted peanuts. Ensure they are well distributed.
  • Carefully melt the white chocolate in the microwave. Follow the specific directions on your chocolate package to prevent scorching or seizing. Once melted and smooth, pour the warm chocolate over the cereal mixture in the bowl and stir thoroughly with a spoon or spatula until all components are evenly coated.
  • Add the Easter colored M&M’s to the coated mixture and gently stir again to incorporate them without melting their pastel shells. Pour the entire mixture onto a large sheet of wax paper or parchment paper spread on a baking sheet. Spread it out into a single, thin layer to cool.
  • Allow the Bunny Bait to cool completely and harden at room temperature or by placing it in the refrigerator for about 15-20 minutes. Once solid, break the large slab into bite-sized pieces. Serve immediately and devour!
