- 1 15-oz can garbanzo beans, drained and rinsed
- 1 1/2 cups semi-sweet chocolate chips
- 3 eggs
- 1/3 cup applesauce
- 1/2 tsp. baking powder
- 1/4 cup + 2 Tbsp. Truvia Baking Blend
- 1/2 tsp. vanilla
- 1/4 tsp. salt
- powdered sugar for topping
Instructions

Preheat oven to 350ºF. Spray a 9″ cake round with cooking spray and set aside.

Melt chocolate chips in a microwave-safe bowl for about 1 1/2 – 2 minutes, stirring every 30 seconds.

In a food processor, blend up garbanzo beans. Add in melted chocolate chips and blend together.

Add in eggs, applesauce, baking powder, Truvia, vanilla, salt and blend until smooth and completely combined.

Pour into prepared pan and bake for 40 minutes or until a toothpick comes out clean. Cool completely before slicing and serving, perhaps with a dusting of powdered sugar.
