  • 2 Boca Essential Roasted Vegetables & Red Quinoa patties
  • 1/2 cup chopped onion
  • 1/2 cup canned black beans, rinsed and drained
  • 1/2 cup frozen corn, thawed
  • 1/4 cup your favorite salsa
  • pinch of brown sugar (optional, to balance flavors)
  • 2-4 tsp. light butter spread (I recommend Land O Lakes Light Butter with Canola Oil for best results)
  • 4 large flour tortillas
  • about 1 cup shredded Colby Jack cheese (or your preferred melting cheese, divided)
  • salsa for serving, along with sour cream, green onions, or cilantro for garnish

Step-by-Step Instructions for Your Quesadilla

  • Begin by preparing your Boca Essentials patties. In a large skillet, heat the two Roasted Vegetable & Red Quinoa patties over medium heat for approximately 10-12 minutes, ensuring they are fully cooked through and flipping them halfway. Once done, remove them from the skillet and set them aside on a cutting board.
  • Using the same skillet, add the 1/2 cup of chopped onion. Sauté until softened, which should take about 3 minutes. Then, stir in the black beans, corn, salsa, and a pinch of brown sugar (if using). Cook for another 2-3 minutes to allow the flavors to meld beautifully.
