The night before my drive home, seeking a light yet satisfying snack, I stopped at a local grocery store near my hotel. I was really craving something fresh, packed with vegetables. As I browsed the produce section, a small container labeled “edamame salad” caught my eye. I honestly wasn’t sure if I had ever tried an edamame salad before, and my curiosity was piqued. I purchased it, along with some Pretzel Crisps, and headed back to my room, eager to taste this intriguing discovery.

That evening, I devoured the entire salad, almost finishing the bag of Pretzel Crisps too – it was that good! While I appreciated the concept of an edamame salad, I felt the store-bought version was a bit lacking in flavor. It was a little bland and didn’t have the vibrant punch I was hoping for. This sparked an idea: I knew I could create an even better, more flavorful version when I returned home. And so, I did!

I am so incredibly glad I took on the challenge of remaking that edamame salad. My homemade version was an instant hit at my house! Even my older boys, who typically aren’t the biggest fans of vegetables, chose this colorful, protein-packed salad over a traditional green salad. This was a true testament to its appealing taste and texture, proving that healthy eating can be incredibly delicious and family-friendly.

To elevate the flavor profile and address the “blandness” of the original, I introduced a few key ingredients and a distinctive dressing. Ingredients

For the Salad:

  • 1 1-lb package frozen edamame, shelled
  • 1 1/2 cups frozen corn
  • 1 15-oz can garbanzo beans (chickpeas), drained and thoroughly rinsed
  • 1 cup black beans, drained and thoroughly rinsed
  • 4 green onions, thinly sliced
  • 1/2 cup fresh cilantro, chopped
  • 1 cup cherry tomatoes, halved or quartered

For the Zesty Dressing:

  • juice from 1/2 a large lemon (about 2 tablespoons)
  • 1 garlic clove, finely minced
  • 1/4 cup extra virgin olive oil
  • 1/2 Tbsp. Dijon or honey mustard (use honey mustard for a slightly sweeter profile)
  • 1/8 tsp. onion salt
  • 1/2 tsp. salt, or more, to taste
  • freshly ground black pepper, to taste

Instructions

  • Begin by preparing your edamame and corn. Fill a large pot with water and bring it to a rolling boil over high heat. Carefully add the frozen edamame (make sure it’s shelled edamame) and cook for exactly 3 minutes. Then, add the frozen corn to the same pot and continue to cook for another 2 minutes. This ensures both vegetables are tender-crisp. Once cooked, drain the water thoroughly from the vegetables and set them aside to cool completely.
  • While the edamame and corn are cooling, prepare the rest of your salad components. In a spacious medium-sized mixing bowl, combine the drained and rinsed garbanzo beans, black beans, thinly sliced green onions, freshly chopped cilantro, and halved cherry tomatoes.
  • Now, prepare the vibrant dressing. In a small separate bowl, whisk together the fresh lemon juice, minced garlic, olive oil, Dijon or honey mustard, onion salt, and regular salt and pepper to taste. Whisk vigorously until all ingredients are well combined and the dressing is emulsified. Pour this zesty dressing over the vegetables and beans in the large mixing bowl. Toss gently to ensure all ingredients are evenly coated.
  • Once the cooked edamame and corn have cooled down, add them to the bowl with the other ingredients. Toss everything together one last time. You can serve this delightful Southwestern Edamame Salad immediately for a fresh taste, or for enhanced flavor, cover it and refrigerate for at least 30 minutes to allow the ingredients to chill and the dressing flavors to meld beautifully.
