  • 1/4 cup low-fat cottage cheese
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • 1/4 tsp. garlic powder
  • 2 Tbsp. milk
  • 1/4 cup shredded cheese (cheddar or mozzarella recommended)

Instructions

  • Preheat your oven to 350ºF (175ºC). Lightly spray a mini muffin tin thoroughly with cooking spray and set it aside, ensuring each cup is well-coated to prevent sticking.
  • Cook the Dr. Praeger’s Kale Littles according to the package directions. For maximum convenience and speed, the microwave method is often the easiest. Once cooked, allow them to cool for a few minutes before finely chopping them into small, manageable pieces.
  • In a medium-sized mixing bowl, whisk the eggs together until well combined and slightly frothy. Then, add in the low-fat cottage cheese, salt, black pepper, garlic powder, and milk.
