Ingredients
- 2 ripe bananas, mashed (the riper, the sweeter!)
- 1 cup quick oats
- 1/3 cup unsweetened applesauce
- 1 tsp. vanilla extract
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 2 Tbsp. Truvía® Baking Blend (or 1/4 cup granulated sugar for a non-Truvia option)
- 1/4 cup Craisins or raisins (or other dried fruit of your choice)
Instructions
- Preheat your oven to 325ºF (160ºC). Prepare a cookie sheet by lining it with a parchment paper sheet or spraying lightly with cooking spray.
- In a medium mixing bowl, thoroughly mash the ripe bananas using a fork. Ensure there are no large lumps for a smoother cookie texture.
- Add the quick oats, applesauce, vanilla extract, cinnamon, nutmeg, and Truvía® Baking Blend (or sugar) to the mashed bananas. Mix all ingredients until they are well combined and form a consistent batter.
