  • 6 cups white bread cubes I used french bread, day-old works best for soaking!
  • 4 large eggs
  • 3/4 cup milk (any kind, whole milk recommended for richness)
  • 1/4 cup heavy whipping cream
  • 1/2 cup orange juice (freshly squeezed for best flavor)
  • 2 Tbsp. Truvia Baking Blend or 4 Tbsp. granulated sugar
  • 1/4 tsp. salt
  • 1 tsp. vanilla extract
  • 1 cup fresh blueberries (frozen can be used, but don’t thaw)
  • 1 Tbsp. light butter (or regular butter, cut into small pats)
  • whipped cream for topping (optional, but highly recommended!)

Instructions

  • Preheat your oven to 350ºF (175ºC). Take your chosen bread (French bread works wonderfully!) and cut it into generous 1-inch cubes. Spread these bread cubes into an even layer on a large cookie sheet. Place the cookie sheet in the preheated oven and toast for about 10 minutes, or until the bread cubes are lightly golden and slightly dried out. This crucial step prevents the casserole from becoming soggy. Once toasted, remove from the oven and set aside to cool slightly.
  • In a large mixing bowl, combine the eggs, milk, heavy whipping cream, orange juice, sugar (Truvia Baking Blend or granulated), salt, and vanilla extract.
