Ingredients

  • 4 4-ounce pieces pork tenderloin, pounded to 1/2″ thick
  • Salt & pepper to taste
  • 4 Tbsp. olive oil divided
  • 1/2 cup walnuts chopped
  • 1 cup chicken broth
  • 1/2 cup California Dried Plums chopped
  • 1 1/2 Tbsp. red wine vinegar
  • parsley to garnish

Instructions

  • Place pork pieces in a large plastic bag and pound out to 1/2 inch thick. Season generously with salt and pepper on both sides.
  • Heat 2 Tbsp. olive oil in a nonstick skillet over medium-high heat. Once hot and shimmering, carefully place the seasoned pork pieces in the pan. Allow them to brown, untouched, for about 3 minutes to develop a beautiful crust.
  • Flip the pork medallions to the other side. Add the remaining 2 Tbsp. olive oil and the chopped walnuts to the pan. Allow the walnuts to lightly toast alongside the pork for about 2-3 minutes, releasing their fragrant oils. Deglaze the pan by carefully pouring in the chicken broth, scraping up any browned bits from the bottom. Let the broth simmer and cook down slightly.
  • Stir in the chopped prunes and red wine vinegar. Continue to simmer for another minute or two, allowing the flavors to meld and the prunes to warm through. Serve immediately, garnished with fresh parsley. Enjoy this gourmet meal!
