Ingredients

  • 1 15-oz can black beans, drained and rinsed
  • 1 cup low-fat sour cream
  • 1/2 – 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 jalapeno seeded and chopped
  • 1 14.5-oz can petite diced tomatoes, drained
  • 1 cup Mexican cheese blend
  • chopped tomatoes green onions and cilantro, for serving if desired

Instructions

  • Preheat your oven to 325 degrees F (160 degrees C). Lightly spray a 1.5-liter baking dish with cooking spray to prevent sticking; then set it aside, ready for the dip.
  • In a food processor, combine the drained and rinsed black beans, low-fat sour cream, salt, pepper, and the seeded, chopped jalapeño. Pulse and blend these ingredients until they are thoroughly combined and smooth. Taste the mixture and adjust the salt to your personal preference.
  • Pour the prepared black bean mixture into your baking dish. Next, add the drained petite diced tomatoes and stir them gently to integrate. Fold in 1/2 cup of the Mexican cheese blend, ensuring it’s evenly distributed throughout the dip. Finally, generously sprinkle the remaining 1/2 cup of cheese over the top of the mixture. Cover the dish with aluminum foil and bake for 10 minutes.
  • Carefully remove the foil cover from the baking dish. Return the dish to the oven and continue baking for an additional 15 minutes, or until the dip is heated through, and the cheese on top is beautifully melted, bubbly, and slightly golden.
