Ingredients

  • 1 cup raw unsalted almonds
  • 1 Premier Protein Cookies & Cream Protein Shake
  • 1/2 cup quick oats
  • 1 1/2 tsp. unsweetened cocoa
  • 1 tsp. vanilla
  • 1 1/2 Tbsp. honey or agave
  • 1/4 cup Enjoy Life mini chocolate chips

Instructions

  • Pour almonds into a bowl. Cover with Premier Protein Cookies & Cream Shake and let soak for several hours or preferably overnight. This step infuses flavor and softens the almonds beautifully.
  • Using a straining spoon, remove the soaked almonds from the bowl, allowing excess protein shake to drain. Place the almonds into a powerful blender. Add 3 Tbsp. of the protein shake that was used for soaking into the blender with the almonds. Pulse until the almonds are mostly ground into small, uniform pieces. Avoid over-blending to maintain some texture.
  • Now, add the quick oats, unsweetened cocoa powder, vanilla extract, honey or agave (or your preferred natural sweetener), and an additional 3 Tbsp. of the reserved protein shake to the blender. Blend all ingredients together until a thick, uniform mixture forms. If the mixture appears too dry to come together, add extra protein shake one tablespoon at a time until you achieve a dense, pliable consistency that can be easily rolled into balls.
  • Once the mixture is well combined and mostly blended to your liking, scoop it out into a separate bowl. Gently fold in the mini chocolate chips by hand. Then, roll the mixture into small, bite-sized energy balls. Store these delicious and nutritious protein energy bites in an airtight container in the refrigerator to maintain freshness. They’re ready to enjoy whenever you need a boost!
