However, after several months of being part of this fantastic challenge, I can confidently say I’m utterly in love with it!

Receiving a list of diverse ingredients and then tasking myself to concoct a cohesive and delicious recipe from them truly pushes my culinary boundaries. It forces me to think outside the box and experiment with flavor combinations I might not typically consider. What makes it even more enjoyable is seeing the amazing creations my fellow Mystery Dish members come up with each month. Their ingenuity and talent are inspiring, and it’s a wonderful community to be a part of.
This Month’s Mystery Ingredients
For this month’s challenge, the intriguing list of ingredients was thoughtfully selected by Christine from I Dig Pinterest. 4 flat pita breads -
1 small container of pesto sauce
or use THIS awesome recipe for homemade -
cherry tomatoes or 1 sliced tomato -
1 cup sliced mushrooms -
4 oz. feta cheese -
2 cups mozzarella cheese -
fresh spinach leaves
with stems cut off
Instructions

Preheat your oven to 400º F (200º C). Carefully spread a generous layer of pesto sauce evenly over each flat pita bread. Then, cover the pesto with a layer of fresh spinach leaves.

Artfully layer the sliced mushrooms, fresh tomatoes (or cherry tomatoes), and crumbled feta cheese over the spinach. Finish by sprinkling a generous amount of mozzarella cheese over the top. Place the pizzas on a baking sheet and bake for approximately 20 minutes, or until the cheese is bubbly and golden and the pita crust is lightly crispy. Remove from oven, carefully cut each pizza into 4 slices, and enjoy your delicious, homemade meal!
