There’s something uniquely comforting about homemade breakfast, isn’t there? I vividly remember Saturday and Sunday mornings from my childhood, filled with the aroma of my mom’s culinary creations. She always made sure we woke up to something truly special and delicious, a tradition that etched itself into my memory as the epitome of weekend joy.

As an adult, and now a mom myself, I have to confess something: I’m not exactly a morning person, especially when it comes to orchestrating an elaborate breakfast for my kids. My usual morning routine leans more towards the “grab a bowl and pour yourself some cereal” philosophy. Let’s just say, the struggle is real! It typically takes me a good 30 minutes, and often a strong cup of coffee, to fully engage in cheerful conversation before the day truly begins. The thought of whipping up a gourmet meal before the sun is even fully awake can sometimes feel like an insurmountable challenge. #momfail, but also #reallife!

However, despite my morning tendencies, I do love to surprise my boys with something extraordinary for breakfast once in a while. And when I do, I aim for pure deliciousness. The other day, I decided to pull out all the stops and made these incredible Applesauce Pancakes, served with a heavenly Cinnamon Syrup. The reaction from my boys was priceless – they went absolutely wild for them! Their eyes lit up, and the plates were cleared in record time, which, for any parent, is the highest form of culinary praise. It was a true testament to how truly good these pancakes are, proving that sometimes, a little extra effort in the morning pays off in spades with happy, satisfied faces.

The secret to these amazing pancakes lies in a few key ingredients and thoughtful substitutions. I used cinnamon applesauce, a staple in our fridge because my little ones are completely obsessed with it. This infuses the pancakes with a wonderful, natural sweetness and a subtle spice from the start. To make these pancakes a healthier choice without compromising on taste, I incorporated Truvia’s Baking Blend and Truvia’s Brown Sugar Blend. These fantastic alternatives replaced traditional white and brown sugars in both the pancakes and the exquisite cinnamon syrup. My family and I are huge fans of Truvia; it allows us to enjoy our favorite sweet treats with fewer calories and carbohydrates, without sacrificing any of the deliciousness we crave. It’s truly a fabulous ingredient for mindful baking and cooking, providing that perfect sweetness profile without the guilt.

The flavor combination of cinnamon and apples is, quite simply, iconic. It’s a classic pairing that evokes warmth, comfort, and all the best feelings of autumn. These pancakes perfectly capture that seasonal charm. Every bite is a delightful fusion of sweet apples and aromatic cinnamon, creating a taste experience that feels both familiar and incredibly special. It’s hard to believe it’s already November, and with the cooler weather, there’s no better time to indulge in these wonderfully spiced pancakes. They truly embody the spirit of the season, making them an ideal choice for a cozy fall breakfast, brunch, or even a comforting “brinner” (breakfast for dinner)!

Creating these Applesauce Pancakes from scratch is a rewarding experience, and you’ll find the process surprisingly straightforward. The dry ingredients, including flour, baking powder, a touch of ground ginger, nutmeg, salt, Truvia Brown Sugar Blend, and ground cinnamon, are whisked together to form the flavorful base. The addition of ginger and nutmeg elevates the flavor profile, complementing the cinnamon and applesauce beautifully, creating a truly unique and irresistible spice blend. Once the dry mixture is ready, wet ingredients like eggs, milk, oil, and, of course, the star — cinnamon applesauce — are gently incorporated. The key is to mix until just combined, avoiding overmixing which can lead to tough pancakes. The batter should be slightly thick but pourable; if it seems too dense, a little extra milk can be added to achieve the perfect consistency. Cooking them on a heated griddle to a golden-brown perfection yields light, fluffy pancakes that are ready to soak up all the delicious syrup.

And let’s not forget the Cinnamon Syrup – it’s genuinely to-die-for! This homemade syrup is surprisingly easy to prepare and truly takes these pancakes from great to absolutely extraordinary. A simple blend of Truvia Baking Blend, Truvia Brown Sugar Blend, all-purpose flour (to help with thickening), ground cinnamon, vanilla extract, and water creates a rich, aromatic, and perfectly sweet topping. Whisking these ingredients in a saucepan and bringing them to a boil while stirring frequently allows the flavors to meld and the syrup to thicken to that irresistible, pourable consistency. The vanilla adds another layer of warmth, making the syrup deeply flavorful. Allowing it to cool slightly before serving ensures it’s the perfect temperature to cascade over your warm pancakes. Every single spoonful of this cinnamon-infused syrup is pure bliss, creating a symphony of fall flavors that will make your taste buds sing.

Whether you’re aiming for a special weekend breakfast, a festive holiday brunch, or even a fun weeknight “brinner” for the family, these Applesauce Pancakes with Cinnamon Syrup are guaranteed to be a hit. They offer a healthier twist on a classic comfort food, packed with delightful fall flavors and a lightness that won’t leave you feeling overly full. It’s a recipe that marries convenience with indulgence, delivering a homemade meal that feels gourmet yet is achievable for any home cook. Don’t hesitate to whip up a batch; your taste buds, and your family, will thank you!

Ingredients

Applesauce Pancakes

  • 2 cups flour I recommend all-purpose for lightness, but white whole wheat flour is a great healthier alternative!
  • 1 Tbsp. baking powder
  • 1/4 tsp. ground ginger
  • 1/4 tsp. nutmeg
  • 1/4 tsp. salt
  • 1 Tbsp. Truvia Brown Sugar Blend or 2 Tbsp. light brown sugar for a traditional option
  • 3/4 tsp. ground cinnamon
  • 2 large eggs
  • 1 1/2 cups milk (any kind you prefer!)
  • 2 Tbsp. vegetable oil (or melted coconut oil for a richer flavor)
  • 1/2 cup cinnamon applesauce (unsweetened or sweetened, adjust Truvia accordingly)

Cinnamon Syrup

  • 1/4 cup Truvia Baking Blend or 1/2 cup white sugar for a conventional option
  • 1/4 cup Truvia Brown Sugar Blend or 1/2 cup light brown sugar for a conventional option
  • 2 Tbsp. all-purpose flour (acts as a thickening agent)
  • 1/2 tsp. ground cinnamon
  • 1 tsp. vanilla extract
  • 1 cup water

Instructions

  • **For the Applesauce Pancakes:** In a large mixing bowl, thoroughly whisk together the first seven dry ingredients: flour, baking powder, ground ginger, nutmeg, salt, Truvia Brown Sugar Blend (or regular brown sugar), and ground cinnamon. Ensure there are no lumps and the spices are well distributed. Next, create a well in the center of the dry ingredients and add the wet components: eggs, milk, vegetable oil, and cinnamon applesauce. Stir with a whisk until all ingredients are just combined. Be careful not to overmix the batter; a few small lumps are perfectly fine and often lead to fluffier pancakes. If the mixture appears too thick, you can add a tablespoon or two more milk until it reaches a desired pourable consistency.
  • Heat a griddle or a large non-stick pan over medium heat. Lightly grease the surface if necessary. Pour the pancake batter by 1/4 cupfuls onto the heated griddle. Cook for about 2-3 minutes per side, or until bubbles begin to form on the surface of the pancake and the edges look set. Flip the pancake over with a spatula and cook the other side until it’s golden brown and cooked through. Repeat with the remaining batter. Serve these warm, fluffy pancakes immediately with the luscious cinnamon syrup, as described in the next steps.
  • **For the Cinnamon Syrup:** In a medium saucepan, whisk together the Truvia Baking Blend (or white sugar), Truvia Brown Sugar Blend (or light brown sugar), all-purpose flour, ground cinnamon, vanilla extract, and water. Stir until the sugars and flour are dissolved and the mixture is smooth. Place the saucepan over medium-high heat and bring the mixture to a boil, stirring frequently to prevent sticking and ensure even thickening. Continue to boil and stir for 3-5 minutes, or until the syrup visibly thickens to your desired consistency. It should coat the back of a spoon nicely.
  • Once thickened, remove the cinnamon syrup from the heat and let it cool for a few minutes before serving. This brief cooling period will allow it to thicken slightly more. Generously pour the warm, fragrant cinnamon syrup over your freshly made applesauce pancakes and prepare to savor every delicious bite. ENJOY this perfect fall breakfast or brunch!
