I confess, coffee isn’t my drink of choice, and I’d never ventured into cooking with farro. Infused oils were new territory, and my palate isn’t quite brave enough for hot peppers – a fact my husband often teases me about! These eliminations left me with a clear path: either a refreshing fruit salad or a vibrant veggie salsa. Ingredients

  • 4 cups seedless watermelon chopped into bite-sized chunks
  • 2 cups sweet cherries pitted and halved (or quartered if really big)
  • 1 cup blueberries
  • 1 1/2 Tbsp. fresh lime juice
  • 1 Tbsp. light agave nectar
  • 2 tsp. fresh mint
  • 1/2 tsp. lime zest

Instructions

  • Toss fresh fruit in a large bowl. In a small bowl, mix together the lime juice, agave, mint and lime zest. Pour over fruit and toss to coat. Serve right away or place in the refrigerator until ready to serve. Sprinkle with a little extra mint when serving, if desired.
