Ingredients

  • 1 9.6 oz package Johnsonville Fully Cooked Breakfast Sausage, sliced into 1/4″ circles
  • 12 eggs
  • 1 4-oz can diced green chilies, undrained
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 10 + flour torillas
  • shredded cheese any kind

Instructions

  • Heat up sliced Johnsonville Fully Cooked Breakfast Sausage in a large skillet over medium heat. Cover and stir constantly until heated through, about 2-3 minutes.
  • Meanwhile, crack eggs into a bowl. Whisk thoroughly and add in salt and pepper.
  • Pour undrained diced green chilies onto the sausage and stir to combine. Add in the whisked eggs and stir until the eggs are cooked to your desired consistency. (I prefer to use a spatula to turn and cook the runny parts, then break up any larger pieces.)
  • Warm tortillas by wrapping them in a wet paper towel and microwaving for 15 seconds, or until just warm and pliable. Place a heaping 1/2 cup of the egg and sausage mixture into the middle of each tortilla, creating a line down the center. Sprinkle with shredded cheese.
