Ingredients

  • 1 15-oz can garbanzo beans, drained and rinsed
  • 2 large ripe bananas
  • 4 Tbsp. coconut oil, melted
  • 2 Tbsp. plain fat-free Greek yogurt
  • 1/2 tsp. vanilla extract
  • 1/2 cup Truvia Baking Blend If you can’t find Truvia, you may use another granular sweetener or approximately 1 cup of regular sugar for similar sweetness.
  • 1 3/4 cup white whole wheat flour
  • 1 tsp. baking powder
  • 1/8 tsp. baking soda
  • 1/4 tsp. salt
  • 2 large eggs
  • 2 Tbsp. milk (dairy or non-dairy)
  • 3/4 cup chocolate chips Dark chocolate chunks are highly recommended for a rich flavor!

Instructions

  • Preheat your oven to 350ºF (175ºC). Lightly grease or spray a standard loaf pan with cooking spray and set it aside.
  • In a food processor, add the drained and rinsed garbanzo beans. Process until they form a very smooth, creamy paste, scraping down the sides as needed. Add the ripe bananas and blend again until completely smooth and combined.
  • Next, add the melted coconut oil to the food processor and blend until fully incorporated. Then, add the Greek yogurt, vanilla extract, and Truvia (or your chosen sweetener). Process the mixture until all ingredients are thoroughly mixed and smooth.
  • In a separate medium-sized mixing bowl, whisk together the white whole wheat flour, baking powder, baking soda, and salt. Gradually add the dry flour mixture to the bean mixture in the food processor, alternating with the eggs. Process briefly after each addition until just combined. Do not overmix once flour is added.
  • Once the eggs and flour mixture are mostly combined, add the milk and pulse a few times. Remove the food processor lid and gently fold in the chocolate chips by hand with a spatula to avoid crushing them.
  • Pour the batter into the prepared loaf pan. Bake for 55-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Baking times may vary depending on your oven.
