Today, I’m thrilled to share one of my favorite “out-of-the-bun” creations: Roasted Vegetable & Black Bean Tacos, served with a luscious Avocado Crema. These tacos are a vibrant medley of colorful, healthy vegetables and protein-rich black bean burgers. But don’t let the healthy label fool you – they are absolutely bursting with flavor! Roasting vegetables is one of my favorite culinary techniques because it intensifies their natural sweetness and creates a wonderfully tender texture. Combine those perfectly roasted vegetables with the zesty kick of Spicy Black Bean Burgers, salty feta cheese, fresh cilantro, and a creamy avocado sauce, and you have what I believe is one of the world’s best dinners.

Roasted Vegetable & Black Bean Tacos with Avocado Crema

Ingredients
- 3 MorningStar Farms Spicy Black Bean Burger patties
- 1 zucchini diced
- 1 cup fresh mushrooms sliced
- 1/2 sweet onion diced
- 1 cup cherry tomatoes
- 1/4 cup olive oil
- 3/4 tsp. garlic powder
- 1 tsp. salt
- 2 1/2 tsp. cumin
- 2 avocados halved, pitted and flesh removed
- 1 5-oz container plain non-fat Greek yogurt
- 1-2 tsp. fresh lime juice
- 1/2 tsp. salt
- reduced-fat feta cheese crumbled
- cilantro for topping
- small flour tortillas
Instructions

Preheat oven to 400º F. Combine diced zucchini, sliced mushrooms, diced sweet onion, and cherry tomatoes on a large baking sheet.

In a small bowl, whisk together the olive oil, garlic powder, salt, and cumin. Drizzle this seasoned oil mixture generously over the vegetables on the baking sheet. Toss with your hands until the veggies are evenly coated. Push the seasoned vegetables to one side of the baking sheet and place the frozen MorningStar Farms Spicy Black Bean Burger patties on the other side.

Bake in the preheated oven for approximately 20 minutes. Remember to turn the vegetables and flip the burger patties midway through cooking to ensure even roasting and browning.

While your vegetables and patties are baking to perfection, prepare the Avocado Crema. In a medium-sized bowl, mash the flesh of the avocados until smooth. Stir in the plain non-fat Greek yogurt, fresh lime juice (start with 1 tsp and add more to taste), and 1/2 tsp of salt. Mix until well combined and creamy.

Once the vegetables are tender and slightly caramelized, and the burger patties are golden brown and heated through, remove the baking sheet from the oven. Carefully slice the cooked veggie burgers into chunks. Assemble your tacos by placing the burger chunks onto small flour tortillas, then spooning on the roasted vegetables. Finish with a generous sprinkle of crumbled reduced-fat feta cheese and fresh cilantro. Drizzle with the homemade Avocado Crema sauce. Now, all that’s left to do is devour and enjoy your incredibly flavorful and healthy meatless tacos!
