Ingredients

  • 6 large hard-cooked eggs
  • 1/4 cup diced California Avocado (about 1/2 of a medium avocado, ripe and creamy)
  • 1/2 tsp. salt
  • 1/4 tsp. dry mustard
  • 1/2 tsp. black pepper
  • 1 tsp. light mayonnaise
  • pitted black olives (for spider decoration)

Instructions

  • Carefully hard boil your eggs using your preferred method. Once cooked, immediately rinse them with cool water or transfer to an ice bath to stop the cooking process and aid in peeling.
  • When the eggs are completely cooled, peel off the shells. Cut each egg in half lengthwise. Gently scoop out the cooked egg yolks and place them into a food processor. Add the diced California Avocado, salt, dry mustard, black pepper, and light mayonnaise to the food processor. Puree the mixture until it is smooth and creamy, ensuring no lumps remain.
  • Carefully spoon or pipe the vibrant green, creamy yolk and avocado mixture back into the hollowed-out egg white halves. Fill them generously, creating a slight mound.
  • For the spider bodies: Take pitted black olives and slice them in half lengthwise. Place one olive half on top of the avocado mixture in the center of each deviled egg, creating the main body of the spider.
