  • 1/2 cup white whole wheat flour
  • 1/3 cup light brown sugar, packed
  • 1/4 tsp. salt
  • 1/4 cup coconut oil
  • 1 1/4 cup quick cooking oats
  • 2 Tbsp. apple or orange juice

Blueberry Layer:

  • 1 Tbsp. Truvia (or other sweetener equivalent to 1 Tbsp. sugar)
  • 1 Tbsp. flour
  • Pinch of salt
  • 1 1/2 cups fresh blueberries
  • 1 Tbsp. fresh lemon juice

Instructions

  1. Preheat oven to 375º F (190°C). Lightly spray an 8×8 inch (20×20 cm) baking dish with cooking spray.
  2. In a food processor, combine the 1/2 cup white whole wheat flour, 1/3 cup light brown sugar, 1/4 tsp. salt, 1/4 cup coconut oil, 1 1/4 cup quick cooking oats, and 2 Tbsp. apple or orange juice. Pulse until the mixture is well combined and crumbly.
  3. Scoop out and set aside 3/4 cup of this oat mixture; this will be used for the topping.
  4. Press the remaining oat mixture evenly into the bottom of the prepared baking dish. For best results, use the back of a measuring cup to ensure a smooth, compact crust.
