Ingredients

  • 1/3 cup lite soy sauce
  • 1 Tbsp. sesame oil
  • 1 Tbsp. white wine vinegar
  • 1 tsp. Truvia or 2 tsp. sugar
  • 1/4 tsp. salt
  • 1 pound uncooked large shrimp peeled and deveined
  • 1 Tbsp. olive oil
  • 2 green onions sliced or diced
  • 1 avocado peeled pitted and diced
  • 1/2 of a lemon
  • salt and pepper
  • cilantro for serving
  • hot cooked brown rice for serving

Instructions

  • Begin by cooking your brown rice according to package directions, ensuring it’s hot and ready just as your main meal finishes preparing.
  • In a small bowl or measuring cup, whisk together the lite soy sauce, sesame oil, white wine vinegar, Truvia (or sugar), and salt to create your flavorful sauce.
  • Place the peeled and deveined shrimp in a separate bowl. Pour about half of the prepared sauce over the shrimp, tossing gently to coat. Set this aside to marinate slightly while you prepare other ingredients.
  • Dice your avocado and gently toss it with the juice from half of a lemon. This step helps prevent the avocado from browning and adds a fresh, tangy note. Set aside.
  • Heat the olive oil in a medium saucepan over medium-high heat. Add about half of your sliced or diced green onions to the pan and cook for 1-2 minutes, or until they are tender and fragrant.
  • Add the marinated shrimp and its sauce to the saucepan. Cook for approximately 4-5 minutes, stirring occasionally, until the shrimp turn pink and are cooked through. Remove the pan from the heat immediately to prevent overcooking.
  • To assemble, scoop the hot brown rice into individual serving bowls. Arrange the cooked shrimp on top of the rice. Add the lemon-tossed diced avocado and garnish generously with the remaining green onions and fresh cilantro. Drizzle any remaining soy sauce mixture over the bowls for an extra burst of flavor.
